Just in time for Easter! An easy salad recipe that is always a crowd pleaser.
Ingredients:
1 ½ cups dry quinoa
½ cup extra virgin olive oil
1/3 cup balsamic vinegar
½ teaspoon celery seeds
½ teaspoon dried basil
½ cup chopped red peppers
½ cup sliced cucumbers
½ cup chopped celery
1 cup of cherry tomatoes, halved
2 cups arugula
1/3 cup crumbled feta cheese
1/3 cup sliced and pitted kalamata olives
Directions:
Cook quinoa according to package directions. Let cool.
Mix olive oil, balsamic vinegar, celery seeds, and dried basil.
In a large serving bowl, add quinoa, red bell peppers, cucumbers, celery, cherry tomatoes, arugula, and feta cheese. Mix well.
Mix in dressing to taste. Serve at room temperature and enjoy!
