Featured Recipe: Mediterranean Quinoa Salad

Just in time for Easter! An easy salad recipe that is always a crowd pleaser.


Ingredients:

  • 1 ½ cups dry quinoa

  • ½ cup extra virgin olive oil

  • 1/3 cup balsamic vinegar

  • ½ teaspoon celery seeds

  • ½ teaspoon dried basil

  • ½ cup chopped red peppers

  • ½ cup sliced cucumbers

  • ½ cup chopped celery

  • 1 cup of cherry tomatoes, halved

  • 2 cups arugula

  • 1/3 cup crumbled feta cheese

  • 1/3 cup sliced and pitted kalamata olives


Directions:

  1. Cook quinoa according to package directions. Let cool.

  2. Mix olive oil, balsamic vinegar, celery seeds, and dried basil.

  3. In a large serving bowl, add quinoa, red bell peppers, cucumbers, celery, cherry tomatoes, arugula, and feta cheese. Mix well.

  4. Mix in dressing to taste. Serve at room temperature and enjoy!
